Ingredients (6 Servings)
2 eggs
½ cup sugar
7 tbsp. unsalted butter
¼ cup milk
1 cup of Amaretto liqueur
Salt
7 oz. (1 5/8 cup) flour
1 tbsp. baking powder
8 oz. ricotta cheese
7 oz. crumbled AMARETTI
½ cup coarsely chopped almonds
Directions:
Preheat oven to 350 °F
In a mixer whisk 1 egg and half the sugar at high speed for about 4 minutes or until it becomes creamy, then add melted butter, milk and liqueur and a pinch of salt. Continue to whisk at low speed and slowly add the sifted flour and baking soda for 1-2 minutes.
Pour mixture into 9×2 buttered and floured cake pan (or lined with parchment paper).
In another bowl mix 1 egg, remaining sugar, ricotta and AMARETTI until it becomes creamy. Pour on top of first batter.
Sprinkle with coarsely chopped almonds. Bake at 350 °F for about 1 hour.
